Two Cheese and Spinach muffins

It is so rewarding to cook with the freshest ingredients, and even more so if they come out of your own garden. This beautiful red and yellow spinach is growing like crazy in my veggie garden at the moment and is the inspiration for this recipe.

Two Cheese and Spinach Muffins


  • 500ml Self Raising Flour
  • 500ml Grated Cheese
  • 500ml Finely Chopped Spinach
  • 5ml Salt
  • 250ml Milk
  • 100ml Oil
  • 1 Egg
  • 2 Rounds of Feta Cheese (cut into 12 cubes)
  • Additional spices to taste – I use 2 T basil pesto, some garlic and parsley grind and some ground black pepper

Flour, salt, pepper, spices and grated cheese

Chopped Spinach


  • Pre-heat your oven to 180 deg C
  • Place all dry ingredients in a mixing bowl
  • Add grated cheese and chopped spinach
  • Mix this all together
  • In a jug or separate bowl, mix milk, oil and egg, beat well
  • Now add the wet ingredients to the dry ingredients, mix until combined but don’t over mix
  • Spoon into muffin tins – this quantity should make 12 medium or 6 large muffins.
  • Press one cube of feta into the top of each of the muffins, all Press the fetta into the middle of the muffin batterthe way in till it almost disappears
  • Bake for 20 minutes or until golden
  • You can also use a skewer to check, if it comes out clean, then they are ready
  • Remove from oven and carefully remove from the muffin tins
  • Cool on a cooling rack, or eat some immediately…
  • Enjoy!
