Banting Fish Cakes

I enjoy making corn fritters to serve with breakfast on the weekend or as a snack for lunch boxes, but they are full of carbs definitely not banting friendly!

So here is an alternative that I made with tuna and only banting friendly ingredients!

What you need:

1 punnet of baby marrows or mixed marrows (I used baby gems, patty pans and baby marrows)

1 small onion

2 tins of solid pack tuna

2 large eggs

2 heaped dessert spoons of coconut flour

2 heaped dessert spoons of almond flour

salt and pepper/spice/garlic to taste – I sometimes add a handful of chopped corriander

How to:

  • Grate the marrows then tip out onto a clean dish cloth
  • Now roll the marrows in the cloth and wring as much moisture out of them as you can
  • Grate the onion into a bowl
  • Drain and flake the tuna, add to onion and marrows
  • Add eggs, coconut flour, almond flour and spices/herbs
  • Mix together well, making sure that all ingredients are well combined

Banting fish cake mixture

  • Now for the fun part – use your hands to roll the mixture into balls, then flatten slightly
  • Shallow fry in oil till brown on one side, turn and repeat
  • Drain on paper towel

Serve with a green salad or add to your lunch box if there are any left 🙂
